Must

Cleaning and cutting of the must
We use 5kgs of must, we boil it and remove the white upper layer. We then take a cheesecloth and we puut inside 2 tablespoons of ashes and let it boil.

ATTENTION
In order for the must to be preserved for more than 1 day, it needs to be refrigerated or frosted.

Traditional ‘moustalevria’
We warm the must and add:
1 glass of flour for 5 glasses of must or
1 glass of semolina for 7 glasses of must or
1 glass of semolina for 7 glasses of must or
1 glass of niseste for 8 glasses of must or
We stir the mixture until it thickens. When it is ready we put cinnamon and grated nuts on top and we serve.

Must cookies
We will need:
1 glass of must
1 glass of extra virgin olive oil
1 glass of sugar
1 tablespoon of baking soda
1 tablespoon of amon
1 tablespoon of cinnamon and carnation spice
1 wine glass of coniak
We stir the ingredients together and add flour until the mixture is soft. We make small cookies with our hands and bake them.
